This project aims to uncover the chronic effects of dietary polyphenols on health by developing innovative in vitro systems that mimic long-term exposure. It seeks to bridge the gap between laboratory and real-world dietary impacts on health.
Although there have been many epidemiological and intervention studies on polyphenol-rich foods showing promising effects in reducing the risk of heart disease and diabetes, the true mechanisms of action remain elusive.
