This project aims to develop tools that help food business operators assess the safety and quality of ready-to-eat foods. By utilizing scientific models, the project will enable operators to evaluate risks associated with different ingredients and processing conditions, particularly for vulnerable consumers.
Food business operators must make daily decisions about food safety and quality, often based on limited scientific data, or full knowledge of the consequences of deviations for the consumer, due to the limited capacity to carry out analyses and risk assessments.
