The SALTRICE project investigates the impact of salinity stress on rice quality by analyzing the molecular structure of starch in various rice cultivars. It aims to develop salt-tolerant rice with improved yield and quality, benefiting both plant breeders and food technologists.
Rice, the world's second most cultivable crop and staple food for about half of the human population, poses an increasing threat to yield and quality deterioration by abiotic stressors, particularly salinity stress in coastal, arid and semi-arid regions.
