This project explores the use of cold atmospheric gas plasma to inactivate Salmonella Typhimurium on food surfaces. It aims to understand the cellular mechanisms involved in bacterial recovery from plasma-induced damage, which could enhance food safety and quality by improving non-thermal decontamination methods.
The demand for fresh or minimally processed food has grown rapidly in recent years.
For this reason non-thermal processes have gained importance as a potential technology to replace the current thermal processing of food which results in extensive undesirable changes in quality attributes.
