The BetterJuice project focuses on developing a technology to reduce or eliminate natural sugars in fruit and vegetable products without compromising taste. This innovative approach aims to create healthier beverage options while maintaining low production costs and enhancing consumer appeal.
One of current challenges in Food and Beverage industry is linked with the need to reduce natural sugars.
In fact, despiteinitial enthusiasm for natural fruit juices, recent studies have demonstrated the natural sugars are as much harmful as addedsugars do.
Thus, producers are focusing on the development of affordable and efficient technologies to deliver de-sugarizedproducts.
