This project aims to develop innovative dairy-free cheeses that match the taste and texture of traditional dairy cheeses. By manipulating plant proteins and carbohydrates, the research seeks to create sustainable alternatives that meet growing consumer demand for healthier, environmentally friendly food options.
Today, there is a considerable desire to consume sustainable products due to healthy and ethical reasons, environmental sustainability, and issues related to greenhouse gas emissions.
