This project develops innovative electrochemical biosensors for monitoring food safety and quality. By utilizing both biological and biomimetic ligands, the research aims to enhance the sensitivity and selectivity of these sensors, making them suitable for real-time analysis using low-cost, disposable electrodes.
In the past decade, the development of biological ligands as alternative candidates to classical devices has enabled rapid advances in many analytical fields.
The Research will focus on the development of a new generation of electrochemical biosensors for food safety and quality monitoring.
The approach of the project will be oriented to test the performances of enzymes or antibodies versus new computationally-designed biomimetic ligands which work by mimicking the biological binding site.
