KHEALTH focuses on exploring kefiran, a polysaccharide from kefir, for its health benefits. The project aims to identify high-yield producers and assess kefiran's bioactivities, while developing sustainable production methods.
KHEALTH will unlock the potential of kefiran, an exopolysaccharide (EPS) from kefir grains, a symbiotic microbial community used as a starter culture to produce the fermented beverage kefir.
