This project investigates the antioxidant activity of carotenoids in food mixtures and their interactions. It focuses on understanding carotenoid biosynthesis in oranges and developing rapid measurement techniques for quality control in food fortification.
The antioxidant activity (AA) of individual carotenoids has been much studied although data on possible interactions among them in mixtures are scarce.
Since complex mixtures are ingested with foods, experiments addressing that question are needed.
Thus, the assessment of the in vitro AA of extracts from carotenoid-rich staples will assist, through the application of statistical methods, in the design of model solutions to further study the existence of possible interactions among them.
