This project investigates how food ingredients affect the levels of eicosanoids and other fatty acid metabolites using targeted metabolomics. It aims to understand the biological effects of these compounds and their potential health implications.
Eicosanoids and oxidative metabolites of other poly-unsaturated fatty acids represent one of the most potent classes of endogenous cellular mediators.
Although about 80% of pharmaceuticals influence the formation of these oxylipins, little is known in regard to alteration by food ingredients.
The aim of this project is to investigate the effects of these compounds on endogenous oxylipin levels applying a targeted metabolomics approach.
