Fish living in polar oceans have evolved an elegant, macromolecular, solution to survive in sub-zero water: they secrete antifreeze (glyco)proteins (AFGPs) which have several ‘antifreeze’ effects, including ice recrystallization inhibition (IRI) - they slow the rate of ice crystal growth.
