This project aims to develop a sustainable process for enhancing the functionality of starches derived from pulse protein co-products. It employs innovative treatments to create starches suitable for food applications, addressing waste reduction and improving market competitiveness.
The increasing demand for pulse protein concentrates and isolates reflects a shift from animal to plant-based diets.
At the industrial level, producing high-protein fractions from pulses generates significant starch co-products.
