This project aims to combat antibiotic resistance in the food chain by developing food-grade starter cultures instead of using harmful chemicals. The goal is to prevent the spread of antibiotic-resistant microorganisms that can affect human health, thereby improving food safety and public health.
Antibiotic resistance is an increasingly serious European and global health issue both for humans and animals, limiting the treatment options — or making them less effective — while decreasing the quality of life.
