This project investigates natural compounds that can replace traditional food preservatives to combat mycotoxin-producing molds in food. It explores the relationship between these compounds and mycotoxin gene expression, aiming to understand their mechanisms of action under varying environmental conditions.
The consumption of mycotoxin-contaminated commodities is related to several acute and chronic diseases in humans.
Consumer pressure in Europe has resulted in efforts to find effective natural compounds to substitute existing food grade preservatives to control the growth of mycotoxigenic food spoilage moulds.
